Wild Ale with Blueberry Blossom Honey.
This is a monster of a beer, made by infusing a ton of honey at different stages during the fermentation and aging process, and again at bottling. We plan to periodically make this beer using a different variety of honey each time; the first iteration of Mellona was made using local Sage Flower Honey. Roughy half of the alcohol content of this 9.1% beer comes from the honey sugar, making it a sort of mead hybrid.
It’s bone dry with zero residual sugar, and lots of minerality. The aroma and flavor is dominated by Brett driven farmhouse funk, with notes of dry hay, black tea, honey (obviously), sea breeze, & ripe melons. The acidity is very mellow, and the alcohol is warming.
Mellona is the Roman Goddess of honey.
