For the next iteration in our anagram red sour series we decided to use a couple new flavors that have been on my mind for a while. One of my favorite beers has always been El Cedro from Jester King, which is a funky saison with cedar. I love that spicy woody flavor, so we bought a bunch of cedar planks and infused them into this beer for about a week in our packaging tank. Then instead of using honey for bottle conditioning like we normally do, I sourced some really fucking badass dark maple syrup from a small producer in Vermont called Bobo’s Mountain Sugar. It had a surprisingly thin consistency for maple syrup, but the flavor was mind blowing.
Maple Spits is a blend of two barrels; one fresh four roses bourbon barrel and one second use Weller bourbon barrel which were both aged for 9 months. This is a three tree beer: oak, cedar, and maple. Perfect for the holidays.
