A relatively new style with roots in Northern CA, the Brut IPA supplants its uniqueness from two seemingly dissonant elements not commonly found together in India Pale Ales – hop-forward intensity with a dry finish. Utilizing an amylase enzyme, the buxom, malty mouthfeel typically found in IPAs is firmed up, leaving a highly quaffable dry finish with all of the hop intensity expected in an IPA.
