You know all that craze about Brewers mainly using hops in the dry hop because they think it loses aromas and flavors while being boiled? Well we don’t believe in that at all. Adding hops in the boil and whirlpool, in our opinion, adds a deep flavor profile that cannot be achieved by just using dry hops. We hit this thing hard in the “hot side” using Mosaic pellets and Citra leaf hops at a higher than normal rate than our previous West Coast Double IPAs. After fermentation, even though this thing was tasting fantastic, we added a 4.4 lb per bbl combo of Nelson and Mosaic hops to take it over the top.
